Juicy & fluffy: Healthy banana bread with lots of protein

Let's revive the banana bread trend with what is probably the tastiest version of its kind! This banana bread is fluffy, juicy and a real feast for the taste buds and eyes . With a fresh lime protein glaze and a touch of cinnamon, all taste buds are appealed to.

We brought this healthier cake for a birthday and received nothing but extremely positive feedback! A # musttry that is ideal as a sweet breakfast or snack , satisfies your craving for sweets and, thanks to its high protein content, keeps you full for a long time and keeps your blood sugar level stable.

Ingredients

FOR THE DOUGH:

5 ripe bananas (1 for decoration )
300 g oatmeal flour
50 g coconut blossom sugar
2 organic eggs (optional)
70g A2 goat protein
60 g nuts (chopped)
Blueberries (optional)
2 teaspoons of baking soda
1/2 tsp salt
2 tsp organic Ceylon cinnamon
40 g coconut oil (melted)
120 ml plant-based milk
1 tbsp apple cider vinegar

FOR THE GLAZING:

2 tbsp A2 goat protein
Juice of 1/2 lime
1 tbsp maple syrup

Banana bread with protein glaze

preparation

Preheat the oven to 180°C top/bottom heat and line a loaf tin with baking paper.

Mix the oat flakes in a kitchen mixer to form oat flour, chop the nuts (e.g. hazelnuts or walnuts) or also chop them in a kitchen mixer and mix with the dry ingredients (coconut blossom sugar, protein, baking powder and salt) in a mixing bowl.

Mash 4 ripe bananas with a fork or mix them with the eggs and milk in a kitchen mixer to form a homogeneous mass. Briefly melt the coconut oil in the preheating oven or microwave and add it to the banana mix. The apple cider vinegar combined with the baking powder creates a beautifully fluffy dough.

Mix all liquid and dry ingredients well and optionally add blueberries to the dough. Pour the dough into the loaf pan and decorate with bananas and optionally blueberries on the bread. Bake it in the oven for about 45-60 minutes.

Mix the protein-lime glaze and pour it over the cooled banana bread. Sprinkle your bread with more cinnamon and walnuts and cut about 12 pieces out of the bread. Enjoy it, your guests, friends, work colleagues, family members... will be thrilled!
