Kürbis Protein Porridge mit karamellisierten Kürbisspalten, Zimtkernen und Walnüssen

Dieses Kürbis Protein Porridge ist unser Herbstfrühstück für kühle Morgende. Geraspelter Hokkaido kocht direkt im Porridge mit und macht ihn cremig und leicht süß. Obendrauf kommen karamellisierte Kürbisspalten, geröstete Zimtkerne, Nussmus und ein paar Walnüsse. Das Protein rührst du erst am Ende unter, so bleibt dein Porridge cremig und klumpt nicht.

Beim Protein hast du die freie Wahl: A2 Ziegen Protein, Bio Weide Whey oder unser Veganes Mushroom Protein, mit dem das Rezept komplett vegan wird. Hokkaido bringt von Natur aus Beta-Carotin und Ballaststoffe mit und darf mit Schale in den Topf. Zarte Haferflocken liefern komplexe Kohlenhydrate und Beta-Glucan, einen löslichen Ballaststoff. Kürbiskerne und Walnüsse ergänzen Magnesium, Zink und ungesättigte Fettsäuren. Mit 40 g Protein hält dich dieses Frühstück lange satt.


Zutaten für 2 bis 4 Portionen

Kürbis:

  • 300 g Hokkaido, entkernt, mit Schale

Für den Porridge:

  • 100 g zarte Haferflocken (glutenfrei)
  • 350 ml Pflanzendrink, zum Beispiel Hafer oder Mandel
  • 1 TL Lebkuchengewürz oder Zimt
  • 1 TL Vanilleextrakt
  • 1 Prise Salz
  • 40 g Lykaia Protein nach Wahl, das sind etwa 4 gehäufte EL: A2 Ziegen Protein, Bio Weide Whey oder Veganes Mushroom Protein
  • 4 EL Pflanzendrink zum Anrühren des Proteins

Für die Kürbisspalten:

  • 1 EL Kokosöl
  • 1 EL Kokosblütenzucker
  • ½ TL Zimt

Für die Zimtkerne:

  • 2 EL Kürbiskerne
  • ½ TL Zimt
  • 1 TL Ahornsirup

Zum Anrichten:

  • 2 EL Walnussmus oder anderes Nussmus
  • 20 g Walnüsse oder Pekannüsse
  • 2 EL Ahornsirup

What exactly is “Whey” protein powder?

All feed must come from organic farming and 60% of it from roughage, such as hay or green fodder. Our whey cows regularly see the fresh green grass. Zubereitung

  1. Kürbis vorbereiten
    Vom Kürbis 200 g in 1 cm dicke Spalten schneiden und 100 g grob raspeln.
  2. Porridge kochen
    Geraspelten Kürbis mit Haferflocken, Gewürz, Vanille, Salz und 350 ml Pflanzendrink in einem Topf bei kleiner Hitze 5 bis 8 Minuten cremig köcheln. Öfter umrühren.
  3. Zimtkerne rösten
    Kürbiskerne in einer Pfanne ohne Fett 2 bis 3 Minuten rösten. Zimt und 1 TL Ahornsirup dazugeben, kurz schwenken und herausnehmen.
  4. Kürbisspalten braten
    Kokosöl in derselben Pfanne erhitzen. Kürbisspalten mit Kokosblütenzucker und Zimt mischen und von jeder Seite etwa 5 Minuten braten, bis sie weich und leicht karamellisiert sind.
  5. Protein unterrühren
    Topf vom Herd nehmen. Das Protein mit 4 EL Pflanzendrink glatt rühren und unter den Porridge ziehen. Ist er zu fest, noch einen Schuss Pflanzendrink dazugeben.
  6. Anrichten
    In Schalen füllen, mit Kürbisspalten, Zimtkernen, Nussmus und Nüssen belegen und mit Ahornsirup beträufeln.


Aufbewahrung

Am besten frisch genießen. Reste halten sich abgedeckt bis zu 2 Tage im Kühlschrank. Zum Aufwärmen einen Schuss Pflanzendrink unterrühren.
