Healthy French toast with sweet protein cream

Ingredients for 1 French toast

  • 1 large or 2 small organic eggs
  • 1 pinch of cinnamon
  • 1 pinch of salt
  • 1 slice of sourdough bread/toast
  • 1 teaspoon coconut oil for the pan

Toppings: e.g. sweet goat protein date cinnamon cream (recipe below), cashew butter, berries (frozen or fresh), more cinnamon…

Ingredients for 3 servings of protein date cinnamon cream

  • 4 large or 6 small dates (soak in water first if necessary)
  • 3 tbsp Lykaia goat protein
  • 50ml water
  • 1-2 tbsp cashew butter
  • 1 tsp organic Ceylon cinnamon
  • 1 pinch of salt
  • Optional: some lemon juice

Step 1 - French Toast

Preheat your pan to the highest setting. Meanwhile, beat 1-2 eggs in a deep plate and add the salt and cinnamon. Allow your slice of sourdough bread/toast to bathe in the egg so that it is completely soaked.

Off to the hot pan! Pour the remaining egg over the toast and let it bake for about 2 minutes. A wonderful cinnamon smell spreads through your kitchen... Turn your French toast carefully and turn off the pan while you prepare your toppings...

Step 2 - Goat Protein Date Cinnamon Cream

It's easy: put all the ingredients in a small kitchen mixer and count the revolutions until your cream is nice and fluffy and creamy.

If the consistency of your dates is rather firm, it may help to soak them in water for 1 hour beforehand.

Add the water little by little to the mixer so that the cream doesn't become too runny. Depending on your desired consistency, you can add more or less water (+ optionally some lemon juice).

Taste and enjoy!

Step 3 - Serve French Toast

…Oh, wait! Don't eat everything right away, we still have the French toast in the pan. Spread the sweet cream on your toast, put a handful of frozen berries in the microwave (or let them defrost beforehand) and decorate on top. A little more cashew butter or cinnamon?
